Tuesday – Red Robin Fundraiser for the Yukon Elem. 5th grade class

Wednesday – Hawaiian Meatballs with white rice and sugar snap peas

Thursday – Cranberry Chicken, Potatoes, Corn on the Cob

Friday – Breakfast for dinner!  Yum!

Menu Plan Wednesday?

Well, you take what you can get.  🙂

I actually had my menu planned Sunday night, but we had just gotten home from a week in Palm Springs (spoiled, I know), and was busy with laundry, grocery lists, and getting kids ready for school the next day.  What happened with Monday and Tuesday you ask?  Well it was full of down time, like grocery shopping and tending to a little girl with a big cough.  And being the typical overachiever I tend to be (hardly) my menu is planned out through May 1st.  Actually, I find it easier to pull out my calendar and recipes and plan for a month at a time.  Leaves the daily/weekly guess work out of it.

Monday – (we ate) Chili Pie

Tuesday – (we ate) Rustic Lemon and Onion Chicken with spinach

Wednesday – Italian Baked Chicken and Pastina

Thursday – Marinated Flank Steak with asparagus and baby red potatoes

Friday – Leftovers

Saturday – Butternut Squash Mac ‘n Cheese

Bummin’ and Brown Bear

I’m so bummed!  The majority of my pictures captured during this last week of Easter and our spring break have been plagued by an apparent dirty camera lens.  I’m gonna have to do a TON of editing to clean up the 200+ pictures taken.  Ugh!

On another note, my boy loves to read Brown Bear, Brown Bear…  I caught him last night, in his chair (that he fashioned on his own), reading himself.  Mostly the last page.

Listen for words like teacher, fish, frog, doggie, teacher, and bird.  Then he turns the page to the ‘white dog’ and says, Go, Dog, Go.  🙂

I love this kid!  He’s gettin’ too big!
